Banana Crumble Mille Feuille (with Salted Gula Melaka)
This delightfully layered mille feuille is made with fresh banana slices, banana compote, salted butter crumble, and lightly sweetened organic-vanilla creme mousseline encased in a golden, flaky pastry, and served with a side of gula melaka (seasoned with a touch of flaky sea salt).
I use lightly ripen fresh banana slices for a subtle tang and for its slight acidity. I pair that with a homemade banana compote that is inspired by our local pengat pisang (cooked with a little gula melaka and extra virgin coconut oil).
This combination paired with the velvety richness of my signature creme mousseline and the crisp and crunch of the buttery crumble and flaky pastry makes this mille feuille an absolute dream for all banana lovers!
