Ginger-Nut Carrot Cake
Boldly spiced with warm flavours of fresh Bentong ginger, and cinnamon, this Ginger-Nut Carrot Cake is a cross between a Christmas favourite—the gingerbread cake, and the good ol’ fashioned carrot cake.
This cake is moist and generously studded with chopped candied ginger, grated carrots, and crushed walnuts. To finish off, it is topped with lemony cream cheese frosting, toasted pecans, and more candied ginger!

cool and dry place for up to 6 - 8 hours (preferably in a room that has air-conditioning) / in the fridge for up to 3 days.
note: it's important to transfer your cake into an air-tight container, or cling wrap your cake box as cakes tend to dry out easily if it is not properly stored in the fridge. this cake hardens upon refrigeration and it is recommended to thaw your cake for about 20 - 30 minutes prior to consumption.
